Zucchini Egg Fritters

This is one of my favorite breakfast recipes because it's quick, easy, and incredibly filling. Enjoy with fermented cashew cheese and sauerkraut, or whatever other zingy probiotic treats you like, on the side.

What you need:

  • 2-3 pastured eggs

  • 1/2 cup shredded zucchini

  • 1/3 cup shredded carrots

  • Handful of chopped leafy greens (spinach, kale, chard, etc.)

  • 1/3 cup masa marina

  • 1 tbsp ghee

  • Salt

  • Pepper

  • Garlic

  • Cayenne

  • Cumin

How to make:

  • Beat the eggs in a bowl, then add all other ingredients one by one, mixing thoroughly

  • Add ghee to a pan and melt

  • Add spoonfuls of the mixture shaped into round fritters to the pan and cook on medium heat for 2 minutes

  • Flip and cook the other sides

  • Remove from heat when each side is golden brown

  • Enjoy!
