Adaptogenic Spiced Maple Apple Loaf

This is a warming, simple apple loaf with a functional kick. A friend told me it was somewhat reminiscent of gingerbread.

What you need:

  • 1.5 cups all purpose flour

  • 2 eggs

  • 2 medium sized apples, peeled and shredded

  • 1/2 cup greek yogurt

  • 1/2 cup melted ghee or butter

  • 1/2 cup coconut sugar

  • 2 tbsp maple syrup

  • 1.5 tsp baking soda

  • 1.5 tsp vanilla extract

  • Powdered adaptogens or mushrooms of choice (I used chaga and ashwagandha)

  • Cinnamon

  • Nutmeg

  • Ground cloves

  • Ginger

How to make:

  • Preheat the oven to 325° F

  • Line a bread pan with parchment paper

  • Add coconut sugar to a large bowl, crack the eggs in, and whisk

  • Add remaining wet ingredients, including shredded apples, and whisk thoroughly

  • Whisk together dry ingredients in another large bowl, ensuring all clumps of flour are broken up

  • Slowly add dry ingredients to the bowl of wet ingredients, mixing together thoroughly as you go

  • Add batter to the lined bread pan and place in the oven

  • Let bake for 30-45 minutes

  • Enjoy with a glass of warm apple cider, chai, spiced milk, or topped with nut butter!
